Blueberry Bliss Krispy Treats with Maple Icing

My father's coworkers are demanding asking for more desserts.  Those little tips and comments here and there throughout the day finally made their way to me.  Of course, the first thing I thought was peanut butter, but after these, these and these, I figured they might want something new.  Okay, probably not... since no one can tire from PB, but I had some fresh homemade walnut butter on hand and thought krispy treats would be a great way to use it.


These krispy treats are both crunchy and chewy with a fresh blueberry flavor and a warming maple icing drizzle.  It's hard to believe that these are all-natural and good for you!


Blueberry Bliss Krispy Treats with Maple Icing:  [no bake, high fiber/protein, GF, vegan*]
(makes 9 treats)

   Krispy Treats:
       4 cups Crispy Brown Rice Cereal (GF if you like)
       1/2 cup Old Fashioned Rolled Oats (GF if you like)
       2 tbs Ground Flaxseed
       1/2 tsp Salt

       210g (1/2 cup + 2 tbs) Brown Rice Syrup
       128g (1/2 cup) Raw Walnut Butter*
       1 tsp Vanilla Paste (or extract)
       1/2 tsp Stevia Extract*
       1/4 tsp Blueberry Extract*
       1/4 tsp Lemon Flavor
       60g (2 scoops) Vanilla Protein Powder

       3/4 cup Dried Blueberries

   Maple Icing:
       30 (1 scoop) Vanilla Protein Powder
       14g (1 tbs) Coconut Oil, very soft
       49g (2 tbs + 1 tsp) Pure Maple Syrup

Directions:
1.  Line a 9" brownie pan with parchment paper.
2.  In a large mixing bowl, stir together the cereal, oats, flax and salt.
3.  In a medium-sized microwave-safe bowl, stir together the rice syrup, walnut butter, vanilla paste, stevia, blueberry extract and lemon flavor.  Microwave for 30 seconds, stir, then microwave for another 30 seconds.  Slowly stir in the protein powder.
4.  Scoop the wet mixture over the rice krispy mixture and fold together.  Fold in the blueberries.
5.  Scoop mixture into the prepared pan and flatten out.
6.  For the icing, mix together all the ingredients in a small bowl.  Scoop mixture into a sandwich bag, snip a corner and design the treats.  Refrigerate for 10 minutes then slice.

*Notes:
1.  Any other nut butter can be used to substitute the walnut butter (such as almond butter, macadamia butter, hazelnut butter, etc)
2.  The stevia extract can be omitted if you want mildly sweet treats.  If you want a sweet treat but have no stevia, I would increase the amount of blueberries and/or double the icing.
3.  I understand that not everyone has blueberry extract (I was just dying to try out my new fruit extracts), so feel free to omit this and increase the amount of blueberries
4.  Vegans, use whatever protein powder you like (soy, brown rice, etc) just note that some powders absorb more liquid than others so I would recommend using one scoop at first and adjust from there.




These krispy treats were inspired by Luna Bars so I thought I'd do a little nutrition label showdown.  Luna Bars are pretty thin and small in size while my homemade treats are more substantial (aka, they're huge).  The weight of one of my krispy treats (96g) is equal to two entire Luna Bars (48g each), so I compared the nutrition labels as such.

Luna's nutrition label is on the left,  Chockohlawtay's nutrition label (includes icing) is on the right:

     

As you can see, there isn't much difference between the two labels, however, the Chockohlawtay version:
  • has less saturated fat
  • is lower carbohydrate
  • has less sugar
  • has fewer ingredients... below is the Luna Bar ingredient list:

... super long nutrition labels make me nervous, even if it's from an all-natural product.

So make these homemade treats ASAP, everyone will be delighted to bite their way through a freshly made, healthy Blueberry Bliss Krispy Treat!  My dad said his coworkers gobbled these up right after he brought them out  :)

  1. These look incredible! And I love the Luna Bar comparison! They get away with marketing themselves as a healthy bar for women, but that ingredients list is terrible!

  2. These look delicious. Is there any thing I could use in place of the coconut oil, say canola oil?

    1. Hmmm, I think canola oil might make the icing too liquidy or drippy... I would suggest non-hydrogenated vegetable shortening, Earth Balance or any natural product similar to those that are solid when cold. The icing should be firm when cold and and soft at room temp :)
