well, I'll let you to discover the secret ingredient for yourself ;)
"Nutella" Fudge Oatmeal Brownie Batter: [eggless, sugar free, high fiber/protein, GF, vegan]
(serves 4-6)
Dry:
144g (1+1/2 cups) Old Fashioned Rolled Oats (GF if you like)
64g (2 scoops) Chocolate Protein Powder
48g (1/4 cup) Granulated Erythritol (or dry sweetener of choice)
20g (1/4 cup) Regular Cocoa Powder (unsweetened)
1/16 tsp Salt
Wet:
one 15oz can Black Beans (drained and rinsed well; about 1.5 cups beans)
1/4 cup Unsweetened Almond Milk
64g (1/4 cup) Natural Hazelnut Butter (no sugar/salt/oil added)
1/2 tsp Stevia Extract*
*you can probably omit this and double the erythritol, but you may need to add a bit more almond milk (about 1-2 tbs)
Directions:
1. In a medium-sized mixing bowl, add the dry ingredients, stir and set aside
2. In a blender, puree the wet ingredients. Scoop the wet over the dry and fold until incorporated. Refrigerate covered overnight and serve the next day for the "true" cookie dough-eating experience! Otherwise, eat immediately ;)

ReplyDeleteI definitely think whey protein has the best taste, but there are good soy protein powders out there if you're vegan.

ReplyDeleteHi, I'd really love to try this recipe (it looks so delicious!), but I have a problem with the protein powder. I'm vegan and the only vegan protein powder I can buy (I could order a flavoured one from the Internet, of course, but it's quite expensive :() in my country (a tiny country in central Europe) is unflavoured soy protein. Do you think using unflavoured soy protein powder would affect the taste of your recipes with flavoured protein powders any significantly? And can I substitute this protein powder for fatfree powdered milk? Thanks for your reply :)
ReplyDeleteUnflavored soy protein might make the batter is bit bland but you can definitely use it. I'm sure fat free powdered milk would work as well, either way, I would suggest adding 2-3 more tablespoons of cocoa powder, erythritol and almond milk. Just give the batter a taste to make sure it's sweet and flavorful enough. Hope it works out!

Oh sorry, I must have used a wrong order of words in the phrase 'substitute sth for sth' (I'm not a native speaker and always seem to have problems with this phrase) :D It was actually meant like this: Would using unflavoured soy protein powder instead of fatfree powdered milk be ok in your recipes? I'd love to make all those yummy and healthy recipes, but grocery stores in my country don't offer fatfree vegan powdered milk (they sometimes offer powdered vegan milk, but it's nothing but fat and sugar :/) and as I said, I can't buy reasonably priced and nutritionally balanced flavoured vegan protein powders, either :(( Too sad :( But I hope unflavoured soy protein powder will work for both of these items :) Anyway, thanks a lot for your reply and sorry for the misunderstanding! :)
DeleteNo problem! :) Soy protein tends to absorb more liquid than powdered milk, so I would say less soy protein is needed than what the recipe calls for, for the powdered milk. I would add the soy protein slowly and stop when you achieve the right texture. Hope this helps!
